Oolong Tea Cookies

Ingredients:

  • 100g Unsalted butter 
  • 55g Powdered sugar
  • 1 Egg yolk
  • 165g All-purpose flour
  • 10g Oolong tea (finely-ground)

Method:

  1. Leave unsalted butter at room temperature for approximately 30 minutes or until slightly softened.
  2. Mix softened butter with powdered sugar and beat until creamy.
  3. Add egg yolk and mix until combined.
  4. Add in sifted all-purpose flour and tea powder, mix until the dough is smooth.
  5. Place the dough on a baking sheet and roll it flat. Chill in the refrigerator for 30 minutes.
  6. Remove from refrigerator and cut out the cookies with a cookie mould. Chill in the refrigerator for 15 minutes.
  7. Preheat the oven to 160°C. Place the cookies in the oven and bake for 8-12 minutes. 
  8. Your freshly-baked Oolong Tea Cookies are ready to eat!
